Baby Cacciota is a pasteurized cow milk cheese from Dallas’ Mozzarella Cheese Company. The recipe is similar to that for Monterey Jack yet this cheese is less salty and sharp. Legendary owner Paula Lambert was inspired to craft a type of Caciotta on one of her many exploratory trips to Italy. The texture of Baby Cacciota is firm and the aroma and flavor of fresh buttery cow milk comes through. This cheese has tremendous pairing potential for a full range of wines and beers.
