Bosque Blue is a farmstead raw cow milk blue produced at Texas' Valdhuizen Farms. We first tasted this cheese at an American Cheese Society conference at recognized the superior quality of milk that went into its making. Three generations of the Valdhuizen family are presently involved in the operation and the commitment to sustainable farming and diversity of plants for the happy animals is evident in Bosque Blue. The paste is moist and crumbly; the aroma is that of freshly mown grass, and the flavor is beautifully balanced, with a touch of the blue as an accent.
