Brick Street Tomme is a wash rind raw cow milk cheese from Indiana’s Trader Point Creamery. The dairy has been in operation since 2003, though it has been farmland for far longer. Trader Point is certified organic and the Swiss Brown cows spend almost every day of the year on verdant pastures. Brick Street Tomme is a relatively new creation at Trader Point, a semi-soft and highly aromatic cheese that is chock full of umami and great nutrients.
