Cave Aged Cardona is a creation of fourth generation master cheesemaker Sid Cook, owner of Wisconsin's Carr Valley Cheese. Sid has won more awards in cheese competitions than any other cheesemaker in North America. The Cave Aged Cardona is a firm cheese crafted from goat milk. The aroma is sweet and creamy with a little tanginess in its long finish.
