Carmody is an award-winning Jersey cow milk cheese produced near the coast of northern California’s Sonoma County. Bellwether farm was opened in 1986 by Cindy Callahan, and was one of the few US farmstead sheep dairies at the time. Her son Liam joined her operation and became the cheese maker; together they grew the operation to include cow milk cheeses based on the recipe for their Pecorino style San Andreas cheese. The Carmody is aged a minimum of three months. The firm texture, fresh grass aroma, and sweet butter flavor makes Carmody an excellent cheese that can be enjoyed on its own.
