Fortsonia is an Alpine style of farmstead uncompromised cow milk cheese produced in southern Georgia. The cows spend every day of the year on pasture – an advantage the Georgia location has over the Alps – meaning the milk it of extremely high quality. The aroma/flavor of the fresh grasses comes through in a sweet and savory profile, and texture is firm. Fortsonia makes a great cooking cheese yet is delicious as a snacking cheese on its own.
