Gran Canaria is a mixed milk cheese from Wisconsin's Carr Valley Cheese. Master cheesemaker Sid Cook won Best-in-Show for this cheese at the American Cheese Society's competition. Combining cow, goat and sheep milk adds complexity to the overall flavor profile, and with a minimum two years aging, the cheese acquires a beautifully full yet balanced flavor: a little sweet butter, a creamy tartness, and a smooth meatiness.
