Paula has perfected the ancient craft of producing leaf-wrapped young cheeses that she started with her award-winning Hoja Santa. This marvelous new creation "Grassias" has a refreshing herbal aroma and flavor with a soft moist texture. The goat milk provides its signature refreshing tartness and soft clay feel,while the cow milk gives it a wholesome milk taste and a buttery mouthfeel. The combination of these two milks and the lemon grass wrapping gives Grassias layers of flavors.
