Haystack Peak is a bloomy rind pasteurized goat milk cheese from Longmont, Colorado's Haystack Mountain dairy. Underneath the edible rind the soft goat cheese oozes gently with the aroma and flavor of fresh goat milk. The pyramid shape is one often used for ripened goat milk cheeses, though this one is only a few weeks old. This style of cheese is complemented nicely with young fruity white wines and with pilsners, wheat beers and IPA's.
