Mezzo Secco is a raw milk cheese produced at California's legendary Vella cheese company. The cheese is aged a minimum of two years so that the cheese acquires a balanced sharp flavor and a toothsome firm texture. Mezzo Secco makes a great pairing partner for many wines and beers, especially the bigger-flavored styles. The cheese is fine for cooking but it is mouth-wateringly delicious on its own.
