One of the newest creations at Oregon’s award-winning Rogue Creamery is a mixed milk cheese named after a mountain in the area – Mount Mazama. The cheese is crafted from a blend of goat and cow milk, with a cheddar-like texture, a sweet fresh creamy flavor and underlying buttery notes. The cheese may make an excellent addition to a recipe yet it is so delicious on its own we would hate to muddle its flavors with any other food, possibly a glass of Chardonnay instead. Other wines of medium intensity to bold intensity should harmonize gracefully with this delicious cheese.
