2011 American Cheese Society Competition Winner!
Ocooch Mountain is a lip-smacking delicious semi-soft sheep milk cheese produced by Brenda Jensen at her Hidden Springs dairy in southwest Wisconsin. It is no wonder that this cheese has won several awards; it is produced from “uncompromised” milk and her farm is environmentally sustainable. This is a wash-rind sheep milk (this in itself a great start on an outstanding cheese) and it has a semi-soft texture that is aged three to four months. It has a nutty, buttery, olive oil aroma and flavor. The Ocooch Mountain pairs well with many wines and beers, it is especially successful with wines produced with the Chenin Blanc grape.
