Pairing Cheese with Red Bordeaux (Right Bank)
Red Bordeaux from the right bank are more Merlot dominant. Arguably, the varietal grows more successfully here than anywhere else in the world. These wines possess a subtlety that gives them enhanced versatility with many assertive cheeses. The alpine styles of cow cheeses make excellent partners, the Gouda styles, as well as the pressed aged sheep cheeses.
