Robiola Castagna is a mixed milk cheese made mostly from goat's milk, a seasonal favorite from the Langhe region of Italy. These delicate, subtle rounds are wrapped in chestnut leaves, which impart a slighly nutty taste and earthy aroma reminiscent of the forest floor. When very young, Robiola Castagna is firm and chalky. As it ages, the cheese becomes creamy around the outside with a melting white heart. Serve Robiola Castagna a Pinot Grigio. One piece weighs approximately 10 ounces.
