Shaker Blue is a new creation of New York’s Old Chatham Sheepherding Company. Their original blue has received wide acclaim for being the closest domestically produced cheese to France’s Roquefort (also made with 100% sheep milk). With Shaker Blue the approximation to Roquefort is even greater, and to an exceptional Roquefort – one with a sweetness and creamy texture, a Roquefort that is not oversalted. Shaker Blue is firm but moist; the flavor is tart and zesty, with an evenly balanced flavor through to the “finish.”
