Sunlight is an aged raw goat cheese produced at Colorado’s Haystack Mountain Goat Dairy. When it opened in 1989 it was one of the first artisan goat dairies in the US starting out by making fresh goat cheeses. Their line has grown and the cheeses have won numerous awards year after year. The cheesemaking today is managed by Jacquie Chang, whose passion for her work is evident in her many and varied cheeses, all of them crafted from goat milk. Sunlight is a wash rind cheese with a firm moist texture, fresh buttermilk aroma and a pungent though creamy flavor.
