The dairy animals of northern Italy are predominantly cows, however one small dairy has taken a fancy to the cheeses that they've been able to craft from Buffalo milk. The Toma di Bufala is a smeared-rind cheese that has the squared-shape of Taleggio: with the pinkish rind, but not too pungent. Smooth and buttery with a semi-soft texture, Toma di Bufala is high in protein, minerals, and good butterfats. This cheese is delicious by itself yet it pairs delightfully with many wine types, particularily Nebbiolo, fruity Viognier or sweet Asti Spumante.
