Windsordale is a pressed cow cheese produced at the Vermont Farmstead Cheese Company outside Woodstock, Vermont. This is their homage to the old British traditional – Wensleydale. Unlike the current Wensleydales produced in the UK today, the Windsordale is crafted from unpasteurized milk, like its originals. This “uncompromised” milk yields a firm flaky texture and a fuller fresh milk aroma and bigger buttery flavor.
