Womanchego is a farmstead raw cow milk cheese produced at Connecticut’s Cato Corners Farm. As the name suggests, the cheese is inspired by Spain’s most famous cheese – Manchego, a sheep milk cheese. Some of the qualities these cheeses share are their outstanding nutritional values, marvelous simplicity and delightful mellow flavors. Womanchego has a firm texture, a buttery aroma, and a gentle tangy flavor. The cheese is excellent by itself but also makes a great cooking cheese.
