Washed Rind
Washed rind cheeses are typically bathed in a wash of salted water,
wine, brandy or local spirits, according to the traditions of each
region. This washing helps to break down the curd from the outside,
gradually becoming a part of the cheese, rather than just a skin.
The washing process helps cheeses to retain moisture, and develop a
powerful flavor. Through this process, the cheese becomes soft, thick
and brilliant often reddish or yellowish.
Washed rinds cheeses typically present a paradox, in that their
colorful, often pungent rinds contrast with beautifully smooth and
