Our cheeses are complex – arranging them from mild to strong and pairing with the right beverage should not be. Each quarter of the CheeseClock™ is associated with several varieties of wines, beers and champagnes. While it is difficult to make generalizations about pairings, over the years we tried hundreds or so for some helpful recommendations. | Start your cheese plate at the 6 o'clock position with young mild goats, double or triple cremes, or bloomy rind cheeses. Suggested beverage pairings: light white wine, champagne, and pilsner beer. | Proceed clockwise, with the next type of cheese being a soft to semi-firm, such as a mild cow, aged goat or sheep milk cheese. Suggested beverage pairings: light red wine, rose wine and lager beer. | Your next cheese can become stronger, bolder and nuttier like a hard mountain, long-aged cheddar and mild washed rind ("stinky") cheese. Suggested beverage pairings: red wine, lambic beer and ale. | To finish, choose a cheese with a bigger presence, such as more assertive washed rind cheese, or a classic blue cheese like Roquefort. Suggested beverage pairings: dessert wine, port, and stout beer. |
