Last Week We Asked: Why are some cheeses wrapped and covered with leaves? Does it serve other purposes than decoration and flavor?

Answer: Leaf-wrapped cheeses have achieved popularity in Europe's main cheese-producing countries, France and Italy, as well as in America. They are immediately identifiable by their whimsical green exterior, which is sometimes mottled with a bit of fluffy white mold.

Initially, the leaves likely served a very utilitarian purpose. They protected, preserved, and maintained the shape of a fragile, fresh cheese during transport and maturation. Some leaves also possess certain antimicrobial and anti-pest properties, further extending the shelflife.

It was, no doubt, quickly discovered that the clever idea of using leaves to wrap cheese had a curious and welcome side-effect: it added great flavor as well. Artisans have now experimented with dozens of different exteriors, including grape, walnut, cherry, hoja santa, tobacco, and hazelnut leaves. Each one brings with it its own distinct fingerprint of flavor, and adds another layer to the complex flavor of these cheeses.

History of Father's Day

According to Wikipedia, the free encyclopedia, "In the United States, the driving force behind the establishment of the celebration of Father's Day was Mrs. Sonora Smart Dodd. Her father, the Civil War veteran William Jackson Smart, as a single parent raised his six children in Spokane, Washington. She was inspired by Anna Jarvis's efforts to establish Mother's Day. Although she initially suggested June 5, the anniversary of her father's death, she did not provide the organizers with enough time to make arrangements, and the celebration was deferred to the third Sunday in June. The first Father's Day was celebrated on June 19, 1910, in Spokane, Washington."

Unofficial support from many public figures came quickly, and Calvin Coolidge recommended it as a national holiday in 1924. However, the all-male U.S. Congress at that time felt that this might be seen as a conflict of interest! And although Lyndon Johnson made Father's Day a holiday it was not officially recognized until the presidency of Richard Nixon in 1972.

Today it is celebrated by many countries on the third Sunday in June, and by many others on other days of the year.

Wikipedia also tells us, quoting The Book of Useless Information (page 240, published 2002.): "More collect calls are made on Father's Day than any other day."
