Last Time We Asked: What is a ''bloomy rind'' cheese and what causes this rind to form?

Answer: A bloomy rind cheese is one which exhibits characteristics of the cheeses of the brie family. These would have a cloudlike soft, white rind and a moist paste and usually a high ratio of Fat In Dry Matter. The rind is encouraged to grow certain molds by inoculating with Penicilium Candidum, P. Camemberti (P. Album), or Geotrichum Candidum (which behaves like both yeast and a mold). These particular molds have been found to be quite beneficial in the ripening of ''bloomy'' rind cheeses because, while they contribute to the de-acidification of the curd and exhibit a beautifully delicate white coating, they also are responsible for the mushroom-like flavor found in many bloomy rind cheeses. Of these, which are mostly French in origin, you will find, Brie, Camembert, Constant Bliss, Chaource, Pierre Robert, Brillat Savarin, among many others.
