Perfect
Thanksgiving Recipe
Pumpkin Bisque with Wild Mushrooms and Cranberry Compote
Any dish featuring both pumpkin and cranberries, not to mention wild mushrooms, is perfect for the Thanksgiving table, or any fall feast.
This recipe calls for cheese pumpkin because its low water content helps a concentrated flavor. Though named a bisque, this soup doesn't
feature any cream; it gets its smooth richness from the mascarpone cheese.
I must put in a word for my favorite mushrooms, porcini, which have a distinctly earthy flavor and voluptuous texture. Other mushrooms such
as chanterelles would also be good here, but if you can obtain fresh porcini, make a point using them.

This delicious class puts his favorites front and center, as Max assembles an all-star selection of exquisite cheeses, each a perfect
example of how much more complete cheeses made with raw milk can be. The current debate over the use of raw milk - milk that has not been
pasteurized - has frightened many from indulging in the wholesome, delicious world of raw milk cheese. In this interactive class, Maître
Fromager Max McCalman unravels the controversy, in Europe and the US, and clarifies the safety issues, laws, culture and traditions, and
nutritive values.

Last Time We Asked: Bovine are classified as Bull (male) and Cow (female), Sheep are Ram (male) and Ewe (female). What are the male and female terms for Goats?
Answer:
Often, we simply say, ''goat’s milk cheese'' to refer to cheeses made from the
milk used from animals of the species, Capra hircus. This is not exactly
incorrect, but those of the genus Capra, are officially Buck (male) and Doe
(female). Goats
are also called Capra
in Italian, Cabra in Spanish, Chevre in France, and in some places in Britain,
a ram is called a Tup. Though they are cousins of antelope and deer, we
have yet to try Caribou cheese!
