Roasted Goose With Glazed Root Vegetables and Gooseberries
Serves 4 - 6
This dish is packed with big flavors in addition to the goose. Gooseberries are a perfect foil for the richness of the goose, and the creamy salsify, an uncommon root vegetable that's still easy to find, makes a big impact at the table.

Last Time We Asked: We all know that cheese tastes good, but what are the health benefits to eating cheese?
Answer: When we consider what cheese is made from, i.e. milk, it should be no surprise that it is a "near-perfect" food! After all, milk is our first (and ideally only) food during the beginning weeks and months of our lives. It is an ideal medium for transferring the vitamins, minerals, and other compounds essential to healthy development.
On the most basic level, cheese is preserved milk. As such, it also contains almost all of the nutrients necessary to human life. It lacks only vitamin C (which is present in small quantities in liquid milk) and fiber. Compared to milk, cheese also contains some additional natural antibiotics, introduced by bacterial cultures added during the cheesemaking process.
Of course, not all cheeses have the same nutritional benefits; but it is certain that artisanal cheese provides a better balance than many foods between high-quality fats and protein. In addition, several naturally occurring components of cheese have been shown to have anticarninogenic and antioxidant properties..
So when someone says that they could live on cheese alone, they may be a lot closer to the truth than they realize. Supplemented with fruit rich in vitamin C and fiber, cheese is such an efficient, complete, and satisfying food that one may find it difficult to keep the weight on!
