Last Time We Asked: What is the advantage to having cheese at the end of a meal?

Answer: There are advantages to having your cheese after your meal, just as there are advantages to having your cheese before your meal. There are certainly advantages to cooking with cheese, or cheese can be your entire meal. The particular advantage to having your cheese after your meal would be that cheese can aid digestion, or it can at least offer pleasant rejoinders to other foods and beverages. Enzymes in cheese can help break down other foods into more soluble forms, like the soluble form of food that cheese is itself. This digestion can be aided with a beer, wine, sake, or other brewed or fermented beverage.

Another consideration to having your cheese after your meal would be to allow it to sit out so that it can come to room temperature, that is if you can hold off until the end of your meal to have a nibble. One may choose to have the cheese for a snack when they had originally intended to prepare a full meal later. After having your cheese snack you may realize that you may not need or care to eat much else, that you are satisfied just fine. This is one of the many pleasures afforded by cheese, there is no other more satisfying and nutritious food.

The grand advantage to having a fine cheese course after the meal is that cheese can in a sense put the exclamation point at the end, and your tummy will be "happy." If you can't decide between a little bit of cheese and a dessert, start with the cheese certainly. Instead of having the sugar downer later, you will have some quick energy that is amazingly nutritious!
