Last Time We Asked: Why are cheeses produced from mixed milks?

Answer: Mixing milks of different breeds was first practiced by cheese makers when their primary dairy animal's lactation cycle was coming to an end. In order to have enough milk to produce the cheese intended, the maker would add in milk from another breed.

For many centuries the mixing of different milk types have been practiced. One example of this is when the milk from a herd of does (female goats) is coming to the end of their cycle, cows milk may be added. This was to insure for a more continuous supply of milk to produce cheese so the dairy had a steady flow of income.

When cheeses are produced with mixed milks the particular qualities of flavors and textures of the various breeds' milks will tend to elevate the final cheese. By that we mean that each breed's milk adds its own unique flavors which can yield a cheese with a broader taste profile.
