Erin Hedley La Dame du Fromage Fromager, Artisanal Premium Cheese
Erin Hedley of La Dame du Fromage was first introduced to the joys and complexities of artisanal cheese after attending a French Wine and Cheese class in New York City. Her curiosity and enthusiasm for cheese was ignited, as well as her appreciation of the pride, care and creativity of the cheese makers who bring us this culinary delight. This experience eventually led to an internship at Artisanal Premium Cheese Center, the highly regarded shrine of the artisanal cheese world. She then went on to complete the Master Cheese Course at Artisanal Cheese Center, additional courses at Murray's, and currently conducts cheese tasting events and provides cheese platters and displays for a variety of clients in New Canaan, Connecticut. She is also a member of the American Cheese Society.
Through cheese tastings and wine pairings, she brings you a fun, social occasion with lots of exciting exploration about cheeses, their accompaniments, how to buy, serve and store cheese and includes the history and stories about the cheesemakers. These artisanal cheese-tasting adventures add a new dimension to any social gathering with discovery by tasting and traveling the world of rare and exotic cheeses.

A: Red Hawk, Pata Cabra, Tourmalet, Valdeon, Robiola Fia, aged Crottin....impossible to say!

A: Artisanal honey with many types of cheese.
Q: What's your favorite beverage type?
A: Red, red wine.
Q: What's your favorite non-alcoholic beverage?
A: Water.

A: Coffee & Biscotti.
Q: How did you get involved in this business?
A: Took a cheese class at the Institute for Culinary Education and was forever changed. Artisanal's internship program convinced me I had to be involved with cheese.
Q: Any unusual ways that you like to enjoy cheese and/or wine?
A: The best way is to eat it is with friends, family and lots of wine.
