Recognized as one of the world's most accomplished
affineurs (cheese agers), Philippe Alléosse brings his
considerable experience to bear as a consultant to the
Artisanal Premium Cheese. Philippe worked closely with the
Cheese Center's staff on the design of five state-of-the-art
cheese aging caves. He also provides ongoing guidance on a
wide variety of cheese selection and aging issues,
particularly those pertaining to the caves' moisture and
temperature-sensitive conditioning, bacterial "seasoning" of
cheeses, and other technical considerations that consistently
yield perfect texture and the fullest flavor from artisanal
cheeses. Philippe owns and operates a cheese shop and four
cheese aging caves in Paris' 17th Arrondisement, where he
lives with his wife Rachel and three
children.
