Ossau Reserve Barthelemy is a piment-dusted sheep's milk cheese made in the French Pyrénées and selected by the reputed fromager Roland Barthelemy as his special reserve cheese. This tomme is lightly coated in AOC-protected Piment d'Espelette a famous Basque paprika. The nutty, sweet and toasty characteristics of the cheese's flavor are augmented by the warmth that the pepper imparts. Pair Ossau Reserve with Irouléguy, Madiran, Cahors, Zinfandel, Tempranillo, or Syrah. |
