Berkswell, easily identifiable by its brown, basket-textured rind and flying-saucer shape, boasts savory, fruity flavors and a compact, often crumbly texture. While Berskwell is somewhat inspired by Pyrénées-style sheep's milk cheeses, it has its own British typicality. When young, this cheese is delicious for eating by itself; when more aged, it can be grated over vegetables or pasta. Pair this cheese with Syrah, a sweet white such as Riesling, or your favorite glass of whiskey. |
