Cabrales is a among the most distinguished blue cheeses and has a reputation for being the "meanest," thanks to its intensly strong, spicy flavor. Traditionally, it is made with a mixture of cow, sheep, and goat's milk. Cabrales has a semi-soft, slightly granular and crumbly texture; its flavor is strong, persistent, and best enjoyed with a raisiny Pedro Ximenez sherry. If a Pedro Ximenez sherry is not available try it with a Sauternes. |
