Isle of Mull Cheddar (also known as Reade's Cheddar) is the pride of Scotland and the Scots' cheddar of choice. Hailing from the eponymous island off the western coast of Scotland, Isle of Mull Cheddar is wild, gamey, and acidic. The Isle's cattle feed on the spent barley from the whiskey-making process - essentially a high-protein cattle feed - and it shows in this cheese's distinct overtones of peat and smoke. Isle of Mull Cheddar is perfect paired with an Isle of Mull Scotch such as Tobermory or Ledaig. |
