A real center piece, Mimolette born in the 17th Century, is made in the same style and familiar ball shape as Dutch Edam. This cheese is mild when young and has a firm orange paste that deepens in color and flavor sharpness as it ages. Mimolette pairs well with Champagne Ruinart as well as Belgium ale, Gin and sherry. Red wine lovers will appreciate it with Carignan or Merlot. |
