Over 15lbs of pristine, fresh milk are required to make just 1lb of this extraordinary cheese, protected under Italy's DOP law. Giorgio Cravero, great-great-grandson of the company's founder (and his namesake), furthers the legacy his forebearers began. With a careful eye, Giorgio locates the best wheels of Parmigiano in their infancy, and guides them to maturity over the course of several years.
