Cravero Parmigiano Reggiano is hands-down the finest parmigiano available today. The Cravero family, beginning with Giorgio Cravero, has been selecting and maturing handcrafted Italian cheeses since 1855. Now, their focus is caring for the "King of Cheeses," Parmigiano Reggiano. Over 15lbs of pristine, fresh milk are required to make just 1lb of this extraordinary cheese, protected under Italy's DOP law. Giorgio Cravero, great-great-grandson of the company's founder (and his namesake), furthers the legacy his forebearers began. With a careful eye, Giorgio locates the best wheels of Parmigiano in their infancy, and guides them to maturity over the course of several years. The result is a superlative cheese with distinct highs of tropical fruit and lows of toasted bread and yeast. Pair with the best Italian reds: Brunello, Barolo, or a fine Super-Tuscan.

Artisanal Shepherd's Pie
Although more traditionally Irish-American than authentically Irish, Shepherd’s Pie evokes the merry green in all of us. This is a slight Artisanal twist on the classic meat-and—potatoes dish.
