Saint-Nectaire hails from the Auvergne region in central France and is made exclusively from the Salers breed of cow. It has a pinkish rind and earthy, grassy flavor. Saint-Nectaire is aged in old wine cellars for 5 to 8 weeks, developing its slightly pungent aroma and yellow, straw-colored pāte ("heart of the cheese"). Saint-Nectaire pairs wonderfully with just about any Burgundy - Pinot Noir, Gamay, or Chardonnay. |
