Spenwood is a raw sheep's milk cheese named after the Berkshire village where it is made - Spencer's Wood. Cheesemaker Anne Wigmore makes each wheel by hand using vegetable rennet to coagulate the milk. Pressed, off-white and smooth with a natural grey-white rind, Spenwood is matured for six months, during which time it develops a nutty, sweet, mellow flavor. Pair Spenwood with a rich, Italian red wine like Sangiovese. |
