Stichelton is the result of an ambitious partnership between the owners of the Welbeck estate - William and Alison Parente - Joe Schneider, master cheesemaker, and Randolph Hodgson of Neal's Yard Dairy. Friesian-Holstein cows munch on the organic pasture of Nottinghamshire, on the northern border of Sherwood Forest. This is the traditional region of England's only name-protected cheese, Stilton. Ironically, English law states that Stilton cheese must be made with pasteurized milk, so when Randolph Hodgson decided to restore this lost raw milk, hand-ladled "Stilton" recipe, he had to find a new name for the cheese: thus Stichelton was born. Pair this classic blue cheese with a glass of Port or Sauternes. |
