Helen is a raw cow milk cheese from Idaho’s Lark’s Meadow Farm. The nutrient-rich milk is supplied from a small herd of Swiss Brown cows grazing on fresh pastures April through October, and then on a diet of grass and alfalfa hay in the winter months. The firm cheese has a grassy aroma and a warm butter flavor, with a little citrus note on the finish. The texture has a more alpine cheese style density. The Helen is delicious on its own but it also makes a great melting cheese. It pairs well with medium-bodied white wines, softer reds; pilsners and wheat beers.
