The term "artisanal" defines cheeses that have been hand-crafted in small batches according to time-honored techniques, recipes, and traditions. This collection offers a selection of 5 cheeses that showcase American cheesemaking at its best. In this collection we include the following:
Laurier An Artisanal exclusive that was developed with Vermont Butter and Cheese. Adorned with hand-selected bay leaves that give it a gentle bit of spiciness.
Nancy's Hudson Valley Camembert is a creamy, soft-ripened cheese made from the milk of the Old Chatham Shepherding Company's herd of East Fresian ewes. Meltingly smooth and buttery with the texture of a triple-crème.
Grayson hails from Meadow Creek Farms in the hills of southwestern Virginia. An outstanding washed-rind, cow's milk cheese, Grayson takes its cues from the old world with a square form like Taleggio and a pâte akin to Chimay.
Artisanal 2 Year Cheddar Our Artisanal Grand Cru Vermont cheddar is aged over two years in ideal conditions and has won numerous awards. The extra aging allows the cheese to release excess moisture, concentrating and focusing the flavors.
Tarentaise has been made by John Putnam from organic cow's milk at Thistle Hill Farm in Vermont since July 2002. Based on the Alpage-style cheese Abondance, Tarentaise is fairly firm and aged for at least six months.
