Local Geography: The coffee is grown among the Barisan Mountains in the northern region of the Island of Sumatra in Indonesian. This area produces 65% of the coffee on Sumatra. Soil Type: Volcanic soil Preparation & Drying Process: Semi-washed processed, it is then placed on patios to dry or in drums fueled by wood and parchment. Elevation: Grown at an elevation of 2,500 feet above sea level. Roastmaster's Notes and Recommendations: The Sumatra Mandheling has been roasted to a Full City Roast and is our darkest roasted coffee. Our Sumatra has a full body, low acidity, earthy flavor with hints of smoke and cocoa. Our Sumatra pairs well with dense chocolate dessert and aged full flavors cheeses, such as a 4-Year Aged Gouda. |
