Local Geography: This region is in the southeastern part of Brazil known as the Minas Gerais Estate. Consistent rains, a high daytime temperature and dry winters make it ideal for growing coffee. Soil Type: The region boasts a rich, deep soil known to the natives as: "Terra Roxa."(Rich Dirt). Preparation & Drying Process: Natural method of drying the whole fruit, then milling to extract the beans, after which the beans are sun-dried on patios for 2 to 3 weeks. Elevation: Grown at an elevation of 1,000 to 2,500 feet above sea level. Roastmaster's Notes and Recommendations: The Brazil Cerrado has been roasted to Full City Roast to bring out the rich nutty flavor and tones of chocolate. Our Brazil pairs well with pastries and firm sheep's milk cheeses. |
