This triple-creme lactic goat cheese was enriched by cream to give a rich, unctuous texture with a delicate finish. Hand molded by the cheese maker, winner of several ribbons, this small dome is covered with a white Penicillium candidum. It reminds one of a small mountain covered by snow. It's aged for several weeks.
I would present it at the beginning of the meal with a salad, as a companion of the BBQ or as a dessert with fruit. Pairing with a fresh Alsatian Sylvaner, a white Hermitage or a rose de Provence will be excellent. But I will not hesitate to also recommend Sparkling Rose of California. Enjoy!
