Petit Mothais is a mild goat's milk cheese in a small wheel that comes from Poitou-Charentes; it is made with a natural white geotrichum rind and has a buttery texture. While aging it develops a fuller goat flavor and then forms some blue spots on the rind, which is perfectly natural and beneficial in the unfiltered goat's milk cheese. |
