The rind of the cheese has a strain of Geotrichum that allows the cheese to breathe while it matures. This allows the cheese to develop a more typical goat milk flavor and texture. With aging the cheese can develop some blue mold on the rind, which is natural and an indication that cheese is made with unfiltered goat milk.
