Munster is a washed-rind cow's milk cheese hailing from the Eastern Vosges Mountains of Alsace, France. It is an ancient monastic cheese with roots stretching back to the early Middle Ages - its name derives from the word monastery in the local dialect. AOC-protected since 1969, Munster boasts a paste ranging from semi-soft when young to quite runny at peak. At any age, its paste has an assertive, deep, rich, tangy flavor complemented by a strong, barnyardy aroma. Munster La Cigogne is traditionally washed in brine; but, upon arrival at Artisanal Premium Cheese, we unwrap and wash it in a fruity Alsatian wine, encouraging a more floral aroma.
