The Red Lacaune gets its name from the sheep breed that produces its milk. This is the same milk that is used to make Roquefort. Red Laucane is a soft cheese with a washed rind and a delicate paste. Its relatively mild flavor earned this cheese a gold medal in Paris last year. The cheese develops a buttery, sweeter flavor with age. One piece weighs approximatively 14oz. The Red Laucane will pair well with many wines; but you might especially enjoy it with a Chenin Blanc, a Rieling, or a Merlot or Zinfandel for a red. |
