Pairing Cheese with Pilsner (Lager) - When pairing cheese with Pilsner, we look for a hint of fruit and sweetness to offset the dryness of the beer. Avoid cheese that is too potent, since it is likely to overpower the beer's more delicate scents.

About Pilsner (or Pilsener) - Pilsner is the legendary "golden beer" of Bohemia and one of the first styles of Lager beer. As opposed to Ales, Lager beers (from the German "lagern," to store) are brewed at the cooler temperatures in which Lager (or bottom-fermenting) yeast thrive. Since these colder temperatures can prolong fermentation, Lagers are traditionally aged for longer than Ales. At this point in history, Pilsner is far and away the most popular style of beer in the world, the American Light style of beer (i.e. Budweiser, Miller, et al.) being a direct descendant of the traditional German Pilsner. Pilsners are typically deep golden or yellow in color and convey a dry, mildly bitter taste. Mild to medium hopping also lends this style of beer a floral, heady aroma.
