Lambic Ale Cheese Pairings
Pairing Cheese with Lambic Ale - Since every bottle of Lambic differs from the next, it is difficult to say with certainty which cheeses are best to pair with it. After extensive sampling, our pleased and fatigued palates preferred cheeses with fruity, earthy, and floral notes. The more perfumed the cheese, the more it mixed with the beer in a pleasant heady mix. About Lambic Ale - Unlike conventional Ales and Lagers, Lambic beer is produced by means of spontaneous fermentation. Wild yeasts are allowed to colonize and slowly ferment the wort (unfermented beer). These yeasts are naturally present in most climates, but more than 86 distinct organisms have been identified in the production of Lambic beer! While the flavors can vary widely from batch to batch due to this uncontrolled, open fermentation, Lambics are typically dry, wine-like, and somewhat sour in character. Often, Lambic beer is brewed with whole fruit, such as raspberries (framboise), cherries (kriek), and blackberries (cassis) – the sweetness and freshness of fruit serves to offset the occasionally musty and ascetic flavors of an unadorned Lambic Ale.
