The time-honored tradition of cheesemaking in Vermont dates back to 1892 when, in the days before refrigeration, dairy farmers formed cooperatives to make their surplus milk into cheese that could be stored for a longer period of time. The folks at Grafton Village have perfected the process, producing award-winning handcrafted cheddars from the fresh, raw milk from Vermont family farms. This cheddar is aged at least 5 years with a smooth texture and a unique cheddar "bite". Try this classic cheese with a lighter red wine like Pinot Noir or Beaujolais, an India pale ale or English stout.
