Brigante is a young, sheep’s milk cheese crafted on the exotic island of Sardinia. Produced to be eaten as a young cheese, it is only cured for approximately 20-30 days. Not as sharp as its relatives Pecorino Sardo or Fiore Sardo, yet its creamy texture is still packed with an intense aroma of milk. Brigante is suitable for Mediterranean-style antipasti, summer fresh salads, melts deliciously over toasted breads and is equally well-matched with pears, sweet grapes and dried fruits. Pairs wonderfully with mild white wines such as Chardonnay and Pinot Grigio.
